Summer is here, and it’s the perfect season to make paletas with your kids!
It’s an easy, simple, and a refreshingly frozen sweet treat.
Last year, we had so much fun making different flavored paletas. This year, it wasn’t any different. For this recipe, I was inspired by my mint plant, and two popular fruits during this season watermelon, and lemons.
I love making simple and easy recipes with my son. When he helps in the kitchen it makes him feel part of the process, and he’s learning life skills.
Together we made these super easy watermelon mint lemon paletas.
Ingredients:
- 1 1/2 cup water
- 1/2 cup sugar
- 2 cups seedless watermelon
- fresh lemon juice
- 2-3 fresh mint leaves
- popsicle molds
Speaking of paleta molds (see them in the picture above?) I found them last year at clearance sale for 50 cents! See those strawberries? We also made a strawberry banana paleta. OK, back to the watermelon mint lemonade paleta recipe Ha!
In a pot I boiled the water, sugar and 2-3 fresh mint leaves. Once sugar was dissolved, I let it cool. In a blender, I mixed the chopped watermelon, squeezed some lemon juice (tablespoon) and the sugared mint water. I used the puree mode to blend the ingredients. Note, I removed the mint leaves. Then I poured in the molds. I didn’t have to put popsicle sticks because the tops of these molds already have sticks!
Let it freeze overnight, and voila! You have watermelon mint lemonade paletas! They are delicious and sweet paletas with a hint of mint. You can always adjust the sugar if you’d like it sweeter.
Now back to the strawberry banana paletas. All I used was a cup of strawberries, one banana, 1/2 cup of vanilla yogurt and sugar to taste. Blend, and pour in molds. I poured them in the small paleta mold, and the rest of the batch in another larger mold.
Both paletas were tasty! My son prefers the creamier strawberry banana paleta.
As you can see below, my son didn’t give me a chance to take a picture of it! Ha! He had already started eating when I came out with the camera. LOL
Me? I enjoyed the watermelon mint lemon paleta. Buen provecho!
